Vinification : alcoholic fermentation and malolactic fermentation in stainless steel vats. Perpetual cuvée inspired by Solera. Each year, 50% of the vat which is drawn off for bottling is replaced by selected wine from the last harvest. This alliance between old wine and new wine, the stacking of vintages, makes it a Champagne out of time.
